Codfish and rice dish (Stokvisschotel)

Traditional recipe from The Netherlands

  • 1kg of soaked dried codfish, shredded
  • 1 tbsp of salt
  • 700g of potatoes
  • 3 cups of uncooked (quick boiling) rice
  • 250g of chopped onions
  • 1/2 cup of butter or margarine
  • 2 1/2 tbsp of flour
  • mustard


Tie up the dried fish in rolls and cook in salted water to cover. Simmer gently to prevent it getting hard for 60 - 90 minutes. Place them on a serving dish.

Peel the potatoes and boil them in a little salted water.
